Since we opened our doors, the menu at Artemis has undergone several iterations as a direct consequence of comments and suggestions given by patrons, as stated by Manager Sara Allen. “we wanted to make it easier for more people to appreciate our cuisine,” you said, “so we became more open.” Customers found it difficult to remember and often difficult to pronounce the language on the menu, so they added a few new favorite dishes and simplified the language on the menu. These dishes include piyaz, a traditional Turkish salad made with beans, onion, parsley, and sumac, and kizartma, an eggplant dish with tomatoes, onion, and garlic, to name but a few. However, the fundamental characteristics of the cuisine remained the same. “the emphasis here is on genuine Mediterranean cuisine, created and served as it is over there,” says owner Erkan Demir, who began his career in Carmel with enterprises selling boots, leather jackets, and carpets. “the focus here is on real Mediterranean food, made and served as it is over there,” Demir adds. All of the food is prepared at home, from scratch, according to the season, wherever possible using organic ingredients, and it is extremely fresh and healthful. The most important thing to remember is that it is one hundred percent genuine food. Both Mustafa Yuzer, Demir’s executive chef, and Demir himself are natives of the city of Istanbul, Turkey. Items like as the “meze tabagi,” a potpourri of eight cold appetizers, became the “artemis sampler,” while the “cevizli ezme,” a distinctive combination of walnuts, tomato, cumin, garlic, and turkish red pepper paste, is now known as the “walnut ezme.” straight and uncomplicated. Artemis also has a small selection of Turkish wines. When it is available, organic food is purchased by Artemis and used in her cooking. Artemis is also open for lunch, and it serves many dishes that are also on the restaurant’s supper menu. This allows customers who are on the fence about ordering dinner to try out lunch first to determine whether they like the food enough to order it for dinner. The advice that Demir gives is straightforward: “give us a go; you’ll like us.” “people who come in and dine here, they love it,” he adds. “those who come to eat here, they adore it.” “They can’t believe that a restaurant like this is located in Carmel.
